Rigatoni with Crab & OLD BAY® VODKA Sauce

Infused with the quintessential flavor of OLD BAY® VODKA, this homemade vodka sauce served over tender rigatoni with a big ol’ pile of lump crab meat is the stuff dinnertime dreams are made of.

Ingredients

1 pound rigatoni pasta

2 tablespoons butter

1 shallot, diced

4 garlic cloves, minced

1/8 teaspoon salt

1/8 teaspoon ground black pepper

1/2 cup tomato paste

1/4 cup (4 ounces) OLD BAY® VODKA

1/2 cup heavy cream

1/3 cup grated Parmesan, plus more for serving

1/2 pound (8 ounces) fresh lump crabmeat

Chopped fresh parsley (optional garnish)

  • Makes 8 Servings.

  1. Cook pasta in salted water according to package directions. Drain well, reserving 2 cups of the pasta water.

  2. Meanwhile, melt butter in a large saucepan over medium heat. Add shallots, garlic, salt, and pepper. Cook, stirring often, until softened. Stir in the tomato paste; cook and stir 5 minutes (the color will darken—this is good—this is where the flavor is!). Stream in the Vodka, stirring to scrape up any brown bits from bottom of pan. Add 1/2 cup of the reserved pasta water, heavy cream, and Parmesan cheese, stirring until the cheese is melted and mixture is well blended. Add additional salt and pepper to taste.

  3. Add the cooked pasta, tossing to coat with sauce. Add additional pasta water, if needed, until sauce is creamy and desired consistency. Gently fold in crab meat and cook until heated through. Sprinkle with OLD BAY® and chopped parsley to serve, if desired.
